Ingredients
- ½ cup granulated sugar
- ½ cup brown sugar
- 1½ tablespoons lemon juice
- ¼ cup cornstarch
- ¾ teaspoon cinnamon
- 2 cups water
- ½ teaspoon vanilla extract
- 5 Granny Smith apples
Instructions
- In a saucepan, add the granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, and water. Bring to a boil over medium heat and simmer for 2–3 minutes.
- Peel and slice the apples into ¼-inch thick slices. Add them to the saucepan.
- Reduce the heat to low, cover, and simmer for 6–8 minutes, or until the apples are moderately soft (don’t overcook them). Stir in the vanilla extract.
- If the filling is too runny, spoon out a few tablespoons of the liquid and mix with 1 tablespoon of cornstarch to make a slurry. Stir the slurry back into the apples to thicken.
- Let the filling cool. Transfer to glass jars, seal tightly, and store in the refrigerator. It will continue to thicken as it sits.
