Ingredients

  • 2 tablespoons oil, divided
  • 1 lb boneless chicken thighs, cut into 1-inch pieces
  • 1/2 teaspoon salt, to taste
  • 1/4 teaspoon cracked pepper
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 8 ounces sliced brown mushrooms
  • 3 tablespoons butter
  • 1 tablespoon chopped brown shallot
  • 1 tablespoon chopped green bell pepper
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat 1 tablespoon oil in a large pan over medium-high heat. Add the chicken and season with salt, pepper, Italian seasoning, garlic powder, onion powder, and paprika. Sear until browned and cooked through, about 5–6 minutes. Transfer to a plate and keep warm.
  2. Heat the remaining oil and 1 tablespoon butter in the same pan. Add the mushrooms and cook, stirring, until they just start to brown and soften, about 3–4 minutes.
  3. Add the remaining butter. Sauté the shallot and bell pepper until soft and fragrant, about 3 minutes. Add the garlic and cook about 30 seconds.
  4. Return the chicken and any juices to the pan. Toss to coat and cook 1–2 minutes more until the vegetables are soft and the chicken is heated through (165°F).
  5. Taste and add salt and pepper if needed. Garnish with parsley and serve warm.

Notes

Chili powder, red pepper flakes, or sriracha work if you want heat. Pull the chicken after the first sear so it stays juicy. Good over rice, pasta, or greens.
