Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 2 teaspoons Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Sauce
- 1 tablespoon olive oil
- 8 ounces sliced white mushrooms
- 6 slices cooked and chopped bacon (about ½ cup)
- 1½ cups heavy cream
- 1 tablespoon fresh thyme
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Preheat the oven to 350°F. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the chicken thighs with Italian seasoning, salt, and pepper.
- Cook the chicken skin-side down for 3–4 minutes per side until browned and crispy. Transfer the skillet to the oven and bake for 18–22 minutes until the chicken reaches 165°F. Remove the chicken to a plate and set aside.
- Heat 1 tablespoon olive oil in the same skillet. Add the mushrooms and cook for 3–4 minutes over medium heat until softened.
- Add the bacon, heavy cream, thyme, garlic powder, salt, and pepper. Bring to a simmer and cook until the sauce thickens, about 4–5 minutes.
- Return the chicken to the skillet and cook 2–3 minutes until heated through. Serve immediately.
