Ingredients

Sauce:

  • 10.5 oz cream of chicken soup (homemade preferred)
  • 1 cup milk
  • ¾ cup sour cream
  • ¼ cup chicken broth
  • 2 tablespoons ranch seasoning mix (seasoning, not dip mix)
  • 1 teaspoon dried parsley
  • 1 teaspoon mustard powder
  • ½ teaspoon onion powder

Chicken & Toppings:

  • 6-8 strips bacon (drippings reserved)
  • 2 large boneless skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 2 green onions, diced

Instructions

  1. Cook bacon in a large oven-safe skillet over low heat until crispy. Remove, chop once cooled, and reserve the bacon drippings. Set aside.
  2. Slice each chicken breast in half lengthwise to create thinner cutlets. Pound to about ½-inch thick. Pat dry, season with salt, pepper, and Italian seasoning. Brush both sides with reserved bacon drippings.
  3. In the same skillet over medium-high heat, sear the chicken for 4-5 minutes per side until golden. Remove and set aside. Wipe out dark spots from the skillet.
  4. Combine all sauce ingredients and add to the skillet. Bring to a gentle boil, then reduce to a simmer for 5 minutes.
  5. Return the chicken (and any juices) to the skillet. Spoon sauce over the top, cover partially, and simmer on medium-low for another 5 minutes.
  6. Preheat broiler to 400°F. Top chicken with shredded cheddar and chopped bacon. Broil for 1-2 minutes until cheese is melted (watch carefully).
  7. Remove from oven, garnish with diced green onions, and serve with mashed potatoes and green beans.

Notes

One of the few meals my house eats and LOVES! We typically use chicken tenders(cut from breast) instead of breasts. I also normally make 1/2lb of bacon.
