Ingredients

  • 12 chicken tenders (about 1¼ lbs)
  • 2 large eggs, beaten
  • 1 teaspoon kosher salt
  • Black pepper to taste
  • ½ cup seasoned breadcrumbs
  • ½ cup seasoned panko
  • Olive oil spray
  • Lemon wedges, for serving

Instructions

  1. Season the tenders with salt and pepper.
  2. Put the eggs in one shallow bowl. Mix the breadcrumbs and panko in another.
  3. Dip each tender in egg, then in the crumb mix. Shake off extra and set on a board. Spray both sides generously with oil.
  4. Preheat the air fryer to 400°F. Cook in a single layer, in batches, 5–6 minutes per side until cooked through and golden. Serve with lemon wedges.

Notes

  1. No air fryer: bake at 425°F for 16 minutes, turning halfway.
  2. Use gluten-free crumbs if you need to. Serving size is 3 tenders.
