Ingredients
- 1 lb lean ground beef
- 1 cup yellow onion, diced
- 3 cups chicken broth
- 2 cups instant rice
- 1 cup medium salsa
- ½ cup Heinz chili sauce
- 1 (8.75 oz) can corn, not drained
- 1 (4 oz) can chopped green chilies, not drained
- 1 oz taco seasoning (about 1 packet)
- 3 cups shredded mozzarella and cheddar cheese
- 1 teaspoon dried chives
Instructions
- Place a large sauté pan on the stove over medium-high heat and add a dab of butter or margarine.
- Cook the ground beef in the pan, adding the diced onions while the beef is cooking. Crumble the beef well as it cooks.
- Once the ground beef is fully cooked, drain the grease from the pan.
- With the pan still over medium-high heat, add the chicken broth and instant rice. Stir gently until all of the rice is submerged in the liquid.
- Simmer, stirring occasionally, until all of the liquid is absorbed by the rice.
- Add the salsa, chili sauce, canned corn (undrained), chopped green chilies (undrained), and taco seasoning. Stir well.
- Simmer for a few more minutes, then remove the pan from the heat.
- Add 2 cups of the shredded cheese and stir until fully combined.
- Sprinkle the remaining 1 cup of shredded cheese on top (do not stir it in). Sprinkle the dried chives over the cheese.
- Let the dish sit for a few minutes so the cheese on top melts. Serve and enjoy!
