Proof the Yeast
- ½ cup warm water (105–110°F)
- 1 tablespoon instant or active dry yeast
- 1 teaspoon granulated sugar
Dough
- 2 cups warm water
- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 1 tablespoon salt
- 6–7 cups all-purpose flour (or part whole wheat)
- Salted butter, optional, for brushing
Instructions
- Whisk the ½ cup warm water, yeast, and 1 teaspoon sugar. Sit 10 minutes until bubbly.
- In a large bowl, mix the 2 cups warm water, melted butter, ⅓ cup sugar, and salt. Stir in the yeast mixture.
- Add flour 1 cup at a time until the dough comes together and pulls from the sides — smooth and slightly tacky, not stiff. Usually 6–7 cups.
- Put the dough in a greased bowl, cover, and rise in a warm spot until doubled, about 1½ hours.
- Punch down. Shape 20–24 balls, pinch the seams, and set on a parchment-lined sheet. Rise 30–90 minutes until doubled.
- Bake at 350°F for 15–20 minutes until light golden. Brush with melted butter if you want.
