Ingredients

  • 3 cups uncooked short pasta (radiatore, shells, or bowtie)
  • 1 lb lean ground beef
  • 1 medium red bell pepper, diced
  • 1/2 medium onion, diced
  • 2 teaspoons minced garlic
  • 1/4 cup taco seasoning
  • 1/2 teaspoon salt
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1/2 cup sour cream
  • 1 cup shredded Mexican cheese blend

Instructions

  1. Cook the pasta in boiling water until al dente. Drain and set aside.
  2. Meanwhile, brown the ground beef with the bell pepper and onion until the beef is cooked through. Drain the fat.
  3. Stir in the garlic, taco seasoning, and salt. Add the butter and let it melt. Sprinkle the flour over the beef and cook 1–2 minutes, until the flour is absorbed.
  4. Gradually add the beef broth, scraping the pan. Bring to a simmer, stir in the tomato paste, and cook until thickened.
  5. Stir in the sour cream and cheese. Add the cooked pasta and toss to coat. Serve right away.

Notes

A 1/4 cup of taco seasoning is right for this amount of sauce (a packet is usually 3 tablespoons). You can swap the tomato paste for a 10 oz can of Rotel. Ground turkey and cheddar both work. Top with cilantro, tomatoes, chips, or extra sour cream.
