Ingredients

  • 1½ lbs boneless ribeye, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon smoked paprika
  • 3 tablespoons salted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh chopped parsley

Instructions

  1. Preheat the air fryer to 400°F for 5 minutes.
  2. Toss the steak with olive oil, salt, pepper, and paprika.
  3. Spread in a single layer in the basket (no spray needed). Air fry 4–6 minutes with no flip. For medium, pull at about 135°F — they keep cooking in the butter.
  4. Meanwhile, melt the butter in a skillet over medium. Add the garlic 30 seconds, then the parsley.
  5. Toss the steak bites in the garlic butter about 1 minute. Serve right away.

Notes

  1. Sirloin, flank, filet, tri-tip, NY strip, or flat iron all work.
  2. Reheat in a skillet or microwave, not the air fryer — too much butter. Fridge 3–4 days or freeze 3 months.
